I found a lot of articles about these cities (there are older ones) and it seems like they have a number of entrances and also large stones to cover the major ones and places to drop boiling oil on invaders. Most of the detailed articles were in Turkish, of course, so maybe some of them delved into the--I AGREE!--interesting logistics of day-to-day living.
